My 91 talon is cutting out after about 5500rpms, I already fixed the boost leak and i have the boost backed down to 12psi so i dont hit fuel cut. Does anyone know why it is doing this. Would it matter that my coolant temp sensor doesn't work at the moment.

Yes.

A car that is having problems should not be taken that high. Fix your temp. sensor then get back.
 
Did you also fix all boost leaks and make sure there aren't other ones? It doesn't matter if you're only at 12psi, if you have other boost leaks you will be sucking in enough air to make the 20 psi or so to hit fuel cut.
 
no i haven't, it wasn't hooked up when i got the car it was ran to manifold pressure, also thismorning it was running excellent, this isn't a consistant thing, but it happens more often than not.
