I think i have a problem with my clutch. When i press clutch peddle RPMs jump up 500rpm and then go down as the should. What is causing my RPMs go up when clutch peddle is pressed?

mine does that too, but only when i boost it and then shift at 3-4K, i just think that it is the engine accelerating so fast, and then you take all the load off it, so the engine is relieved, but keeps accelerating, i dont think it is really a problem...

It could also be the spring on the throttle body is somewhat sticking or the spring has not been tensioned correctly. I have dealt with that one before after a tb rebuild.

Does it do this at idle? Like say you start it in neutral, havent touched gas at all yet, then push the clutch. Does it still rev up??
To answer your question, yes. But only slightly, not by 500 rpm's. It's because you're relieving a small amount of stress from the engine.

How much does yours rev up? I'd say 200 rpm is normal, more than that is not.
