car heats up after 2 MINS....wtf???

Alright well im not sure if this is posted somewhere else but because im really ticked about my car, i dont have the patience to search. My car had a warped head because of a blown headgasket so i repaired it and now after i put it in timing, my car heats up after about 2 mins. fan doesnt turn on and i replaced the thermostat and radiator cap...didnt seem to solve the problem. I've been told it could possibly be a blown headgasket or blown head or block although theres no mixture with oil and water so im not sure whats up. Up to date my car's resevior starts to through water out so i immediately shut it off...again no mixture of water and top radiator hose is hot, could it be my water pump? is it a hassle to take off? can anyone please help i need to find out asap.
 
Mine shot antifreeze out the overflow but I put in a 180 tstat and a 13lb cap instead of the 6 no more of that. However my fans didnt work either turns out a few wires broke inside the sleeving and a plug had burnt out took me a month to find that shit. But it still overheated turns out my waterpump was bad so I changed the HG and the pump. Still overheated just a tad though like to 220 so I tightened my head bolt down to 100 instead of what the chiltons said and its all good now!
 
right now im so pissed i havent even bothered to check to see exactly whats wrong because all of my friends are getting ready to take their cars out to the track so i havent bothered. let me ask you a question though...if the water moves or at least begins to bubble does that mean my waterpump is working?? i thought about taking it to a shop but im to scared to see how much money i have to throw at it again just to fix what they think might really be wrong. also how can i find out to make sure my fans are actually working?? when i turn on the a/c both turn on although off of a cold start when i start it up the fan wont go on and boom 4 mins. later it starts heating up and because my gauge inside isnt working because of the switch which im sure i have no way of finding out.
