how can you tell if your car has "jumped" the timing? Will the engine break down and stop or what? Because sometimes it feels like my car changes from peppy and quick, to sluggish and slow within seconds. By the way, just replaced timing belt and things last week.
 
if your timming belt jumped a link your rpms will proble drop alittle bit. It gotta be constantly slipping/skipping for the car to crap out and stall on you.
 
Yes, severe engine damage will occur if you jump too many teeth. If you have any doubt keep it parked untill you are absolutly sure!

As for the symptoms you mentioned if you could be more specific in the conditions this occurs at, how often does it swtich from being peppy to slow. Dataloggers are very helpfully in seeing if your timing is getting retarted and other problems.
