2. Rota Slipstream comes in two flavors of 16"x7" -- 40mm offset and 45mm offset. You want the
40mm offset. With a 5x114.3mm bolt pattern.

CALL FIRST AND CHECK AVAILABILITY BEFORE ORDERING ONLINE!!!!. They have had issues keeping stock of the 16x7 40mm offset in gunmetal in the past. Either way, machiii.net has excellent prices and free shipping. I have used them several times with excellent shipping/service.
3. You should really look toward a 1.5" drop -- 2" screws with the front and rear camber quite a bit. You should also look into purchasing camber correction kits for the front/rear. The rear can be adjusted for very little $$$ if you get longer bolts and purchase some thin hardened washers and shim the upper two mounting bolts for the rear upper control arm. The fronts are adjustable by using the SPC aluminum adjustable upper control arms, or with adjustable camber plates. Here is the direct link to RRE's site selling both the products mentioned above. I have the aluminum control arms on my car, but they are quite a bit more expensive than the inserts.

5. Rolling really won't be necessary if using a 215 or 225 wide tire on the 16"x7" rims.
6. Street and strip.
Ok, this is the fun one now. When you say street/strip...First off, is this car driven year-round through snow/ice/slush/crap/rain?? Or are you intending on having a set of DRY race tires, and a set of street rubber on two sets of rims? If you want the best all-round tire that can be left on throughout the year, and give excellent traction in any weather condition, while still pulling 1.5-1.6 60's at the track, I am only suggesting one tire. They are called:
NOKIAN HAKKAPELLIITTA RSi's 225/50/16 or 215/55/16 are the two that are ideal fits for the 16"x7" Rota Slipstream, and clear everything on the car with a 1.5-2" drop. I was using these for over 3 years (never changed them -- only rotated them), did over 35,000 miles, 200+ track passes, and countless street launches -- I still had half tread when they were taken off.
They are one of the most badass ice racing/snow/all-season tires on the market, and they deliver unbeatable performance for an all-round tire. Keep in mind, these aren't dry handling tires -- they are made to perform better than anything else in every other weather condition. Don't discount them in dry though -- these tires have landed me several mid 1.5 60's, and dozens of 1.6 60's at the track. They launch and have extremely good traction due to their tread compound, and design with a crapload of sipes (tread cuts). Take a look at them:

Part 2: If the tires you are looking for are going to only be a summer DRY tire, then I would look at a few -- Yokohama ES100's, (budget friendly) or Parada Spec-2's, or AVS intermediates, the Toyo Proxes T1R (moderate) or R1R, Hankook Ventus HRII's or Ventus RS-2, etc. Expect to pay around $100-170/tire.
