will these rims fit a 2g talon

they have ones with 46 and 35 offset.

if they do fit what would be the best tire size?

yes those wheels will fit but your going to need to have the fenders rolled because of the offset on them. the wheels will stick out about an inch or so.

As for the tires, I would use a 235 or a 245 max width depending on which offset you choose. The rear fender lips will indeed have to be rolled, and you'll need a stiff suspension.
