Newbi Style Question on Cam Gears

I'm not a newbie to most stuff... I've own/built some pretty sweet and fast rides. But since I have to replace my head and I want to throw down 2000 on a full head build, I need to know some info on Adjustable Cam Gears. So to the questions... or question...

How are cam gears 'supposed' to be adjusted? Is it required to adjust them while doing dyno runs to monitor changes? Since we have low-0 clearance motors.... is it possible to damage the valves by over adjustment on the cam gears?
 
There are some cookie-cutter generic adjustments roaming about, but for the best gains, you should adjust them while on a dyno.
