knock with any boost/af ratio, rough idle and sometimes dies

Ok the car is a 97 tsi awd with a 6bolt swap, black top CAS, and a stage3 chip and with your basic bolt-ons.

This is how it all started. The car drove completely fine. Ran awesome. No knock at 20psi and a 10.8-11.0 a/f ratio. I parked the car and went to run it 2 days later. I put a different air filter on the intake, took it out and it knocked right when boost hits. I turned the boost down to 12psi (wastegate spring pressure) and it did the exact same thing. A/f can be 11.0 or 10.0 and it still knocks. The knock gauge shoots way up and doesn't come down.

So I park it and swap the air filters back. I start it and let it idle for a bit and I noticed the idle is getting kind of bad. There is a big miss and the idle fluctuates A LOT. It will rev up completely fine..but the idle will vary from 750 to about 1200 and when it does miss it just about dies, sometimes does. It also spits out black soot on the ground and the wideband will swing towards the rich side while it idles, instead of hovering around 14.7. The fuel pump doesn't seem to be making that netorious "walbro wine" but has a different noise. I just don't get if the fuel pump was going out why would I be spitting fuel and my spark plugs turning black. I cannot figure it out for the life of me.

Here is what i've tried/have:
-swapped known coil pack
-new plugs/wires
-swapped known working MAF
-no boost leaks
-timing is dead on (ignition and belt)
-newer pte 880cc injectors
-new after-market fuel filter
-pump seams to be running fine (255 re-wired)
-compression is 150 across the board
-known working ISC
-new o2 sensor

what else could there be? I have no idea what the problem is. I could probably get a video of it idling/missing and what gauges are doing? HELP ME OUT!!

Maf plug wiring is all good, plug is secure. Coolant temp sensor wiring is good and when the coolant sensor is un-plugged the fan kicks on high and the idle is raised.

Did you mean check for leaks between the maf and turbo? I have an FP intake and both couplers are in good condition. The intake didn't change when this happened?

A video would definitely help to some extent. The knock sounds to be a bad knock sensor if it's constantly coming on like your saying. Make sure your fuel pump got all the seals including the clip, o ring and cap, a minor leak inside the tank or even the sending unit seal can create problems and issues.
