So is it normal to have a shop quote a tranny drop, rebuild and reinstallation at 1,600-1,100? or would it be cheaper to find a working tranny and have it installed?

About half of that is labor, you can spend the money youd be spending on labor on tools and beer and do it yourself with a few friends.
. I agree with the replacing the tranny yourself. You can get one for the same if not cheaper rebuilt by the pros and just put it in yourself. Like I think a Shep stage 2 runs about 1200 with your core maybe a little more but shipping is like 125 total and thats with them sending you a box to send them your core.
