Erasable Programmable Read Only Memory.

Basically having an Eprom ECU allows you to erase the current settings in leau of settings that you want to put. Good baseline tool to start tuning.

You can also use keydriver chips once th ecu has been socketed. DSMlink is also another good reason to use an eprom. Theres alot more tuning that can be done with an eprom. Dsmlink has some good info on how to find an eprom ecu.
