I have no idea why but ive went through three thermostats in 2 years and less than 6k miles. My temp gauge reads normal at idle but when driven it cools down and adds fuel because it thinks its cold again. I have been through a 160,180 and a 190 thermostat and every time i change thermostats it reads and works fine for the first month or so.

Where are you getting the t-stats from? normal parts store ones are junk. Get an OEM one. Also, put the old ones in a pan of water with a candy thermometer and heat it up. They should be opening around 195, if they start opening way earlier than that, they are junk.
