I'm going to be buying a motor gasket kit and found out that there is a kit for the 7 bolt and a kit for the 6 bolt and I'm trying to find out the deference between the two...

and this is my set up i got a 6 bolt block with a 7 bolt head
 
Doesn't matter I have a 6 bolt block and 7 bolt head. Head gaskets are the same. I just have a 6 bolt head gasket. I have ARP studs I just had to drill out the holes a little for the 6 bolt headtsuds.
 
You only have to drill out the 2g heads....


Correction, you have to drill out 7 bolt heads. All 7 bolt heads use the 11mm bolt holes(1g 7bolt and 2g 7bolt).

6 bolt heads have the 12mm bolt holes.
