If I boost pretty hard from a stop in first gear, the car smokes. Also I get knock in first gear ONLY. 2nd and 3rd gear, I can boost hard and it does not knock or smoke.

Is this normal or could there be something wrong?

More information would help:

Has the knock sensor ever been replaced?
How much knock are you getting in first gear?
What color is the smoke?

If you stop and idle, then get on it and get blue smoke you might want to check your valve seals and guides. I just replaced mine and what a difference that made in oil consumption.

I need to check on the color of the smoke; I think it may have been blue. I put the small little catch cans on, but the one on PCV may have been kinda full when I ran it last.

I just emptied it, I will run again and see if it smokes. Those little air compressor filters is what I use for a catch can, they fill up quick. I think when they are about 1/3 full, the oil then just pushes thru, but not sure.

I'm also just generally curious how common it is to smoke blue only in first when boosting it aggressively. Like if I let the boost build gradually, it won't smoke. It's usually just if I hit it hard in first.

Engine has been rebuilt, not sure how many miles ago, maybe 40K. Compression is 155 across the board.

Here is my log, going thru 1st, 2nd and 3rd gear (traffic was heavy so I was somewhat limited in abililty to log).

Actually there is 1 or 2 counts of knock in 2nd or 3rd, but most of it is in 1st gear.

It doesn't seem to be consistent with valve stem seals. As example last night I just got off the highway, I stopeed but only a couple of seconds and when I took off it smoked. I mean it really didn't idle long then at all. Also if it idles a long time, it won't smoke unless I get on it real hard. Usually with valve stem it would after idling a long period even if i only got on it a little (previous engine had high miles, and valve stem seals did leak a bit).

It sounds like you have two separate issues that are likely unrelated. The knock sensor needs to be inspected and replaced, especially if it's the original piece. Change it and re-log to see if at least that issue is taken care of.

To see where your smoke is coming from, re-run a hot compression test followed by a leakdown test. Once you have those numbers, that'll help us identify what to check next. It would also be prudent to pull the intake and check for shaft play on the turbo which would indicate sealing issues under boost. While I don't think that's the culprit, it's a natural step in the troubleshooting process to rule out all possibilities.
