Cooling issues & stock 2g TStat rating 180, not 190

I was always told that the stock 2g thermastat was like 190 degrees. I did some research and found out a OEM part # for a 180 degree tstat and picked it up from the local Mitsu dealer. When I told the parts guy the part #, he said "Thats odd, its not in CAPS", but they had one in stock nonetheless.

I've been having cooling issues ever since I started watching my coolant temps after I had a leak in my old radiator and adding a big fmic. Nonetheless, after adding a Fluidyne and not really getting much cooler, I decided to go ahead and change the tstat and add some royal purple Ice as well as some fresh rad fluid. Probably should have done this first, but I was going to get a fluidyne anyhow. To get to the point, after I drained the Fluidyne, I went ahead and pulled off the lower rad hose from the radiator at the bottom in order to drain the rest of the fluid from the block out, but odd enough, no fluid came out. I thought to myself, thats odd. I went ahead and pulled off the side water neck and all the fluid then came pouring out....pulled out the tstat and although my new replacement was alot smaller, they both said 82degrees on them. Thus, I am assuming that they are both 180 degrees. I proceeded to put in the new tstat and put the water neck back on, connected the bottom rad hose and flushed some water through with a hose, and this time water came out of the bottom rad hose when I took it off. I am guessing that an air pocket was in there or something. Now my temps are quite awesome...around 186 cruising (70) and at idle, it actually cools down to around 180. The car actually takes a tad longer now to get warmed up, but I am thinking this is due to the purple ice that I added. Sorry for the long post, but I just thought that was odd in more ways than one and possibly for those who are having cooling issues, the purple ice stuff is pretty good. Before all this, I was seeing temps around 216 while cruising.
