Just started raining in CA.
-What is to stop water from getting into our open filters? What happens if some does?

Well basically there is a car surrounding the filter. Water doesnt travel like air, so theres really nothing to worry about. I know some water does get into the filter section, but it may be just like a mist or something and not nearly enough to cause hydro lock... its sorta like water injection =)
 
If you've relocated the filter to a more external area, for cold air intake, I've heard people say to watch out for hydrolock, but I'd think unless you're running through some deep-ass puddles that submerge the filter, a little splash here and there wouldn't help (but I'm totally talking out of my ass)

If you do have a CAI and have the filter sitting near the ground where it could get submerged, you can get an air bypass valve from AEM:

There was an article in SCC a while ago when those things first came out. A guy was trying to promote the thing and they put his modified NSX on a dyno and dunked the filter in a gigantic fish tank. It came out OK I guess.

Of course, the air is not filtered when it's going in through the bypass. It's a lot better than sucking water into the engine though. I used to offroad a jeep and sucked some water into the engine going though a big, deep mud puddle. It didn't hydrolock but it was blowing oil all over the place until I cleaned the mud out of the vacuum lines.
