where's the best place to mount an EGT gauge? In the interior or somewhere under the hood?

In the interior. You need to be able to monitor it all times.

Put the probe in the #1 cylinder exhaust runner, put the guage in the interior in either an a-pillar pod or instrument cluster pod.

dont you need to be able to see the fuel pressure at wide open throttle in order to now how much to adjust the fpr?

no, you adjust base fuel pressure, not fuel pressure at WOT
