I figured it would be way easier than it really was. When I first bought the car a few months ag, after the last GSX being totaled, the sunroof seemed to not leak or anything but that wasn't the case after owning it for a few months. I first figured the drain holes where just clogged, so I bought some weed wacker line and pushed it through the holes but they all came out clean. The next time it rained I looked to see if I could see anything leaking and sure enough, I did. The weatherstrip was so battered up that it was peeling, from the inside the car, and letting water drip in. I guess the drain holes couldn't get all the water out fast enough. Any case I finally got around to calling up JNZ and bought a new weatherstrip from them. Today I finally got around to installing it.
Here are some pictures from the old weatherstrip. Yes, that's rust.

Rust was even in the weatherstrip itself! WTF

The new one was a little longer so you can have a perfect fit. I used a dremel to cut it since scissors would just make a jaged edge and the cut wouldn't be straight.

I first tried to just slide the new one on but that wasn't working at all. So what I did was I took a flathead screwdriver and twisted/worked it around the weatherstrip where the slit was that allowed it to slide onto the frame of the glass. It made the slit wider and made it so much easier to get on. This took me about 2 hours total but I used a rubber mallet to slide/hammer on the new weatherstrip. I know, sounds dangerous but it went on fine and no damage to the glass. I just pounded little by little and you can see as it starts to fully seat itself on the frame.
Here it is with the new weatherstrip on:

Two of the corners didn't seat all the way on top of the glass but I will see if the sun and heat will make it go down over the next few days, as well as I will work with it. If it won't sit fully I'll probably take a dab of black RTV to it and that should work.

I haven't tested it yet but I will in the next few days, unless it rains than that will be the ultimate test for it.
