How much will switching from 18 inch rims that weigh 27.5lbs to 17 inch rims that weigh 16.5 help me???

I'm gonna lose alot of money if I do it but if it will make a big diff in performance then I will

depends on the treads that your using, but i doubt youll feel a big difference but cornering will be better cause your lower to the ground hence better gravity equa-distance
