Help with Idle question, up down up down

Just did head gasket install due to oil leak. car is up and running now, but i still have these few question.
What can i look for.
Question, before and after still does the same thing.
Ok
1. Idle goes up and down when in part even after car warms up. (what can i look for?
2. when i drive i can feel the occasional increase in throttle/gas pedal increase. (what can cause these symptoms.
3. all this cause the car to stall when i come to complete stop if i dont give it gas.
i have idle set to about 850-900rmp, just below the first number on rpm dial.

3. o2 sensor
