I just installed my 16g evoIII last weekend and left my maft settings the same as the old stock turbo and tonight I turned the Wot dial one click 5% to add more fuel and when I was at WOT it shot out a puff of grey or white or black smoke hesitated and then took off. I then turned my maft back one dial and it drove normal again with no smoke. My question is was that to much fuel or something else. Also is it normal for this turbo not to kick in as fast as the T-25 i feel more power but it does not seem to come quick.
 
you were in a rich air fuel state more than likely, only datalogging would prove this, but I am sure its the case.

For your second question, a turbocharger spins at speeds above 100k rpms, think about what a little weight gain would be at those speeds, larger turbos in GENERAL spool up(kick in) slower.

If this increased lag(waiting for the turbo) is to much for you I would suggest a higher flowing exhaust/charge side setup. My 16g will hit 20 psi at 3100 rpms.
 
I would have been turning the dial counter-clockwise which i thought was leaning it out. My logger shows that stfl is close to zero and the timing is in the 20's. I can get more logging info if anyone can help. I have yet to make any changes on the safc because i am still tring to get the maft to work correctly. Besides that puff of smoke them maft is working well except it will throw a cel Manifold absolute pressure/Barometic pressure i forget the cel numbers but i can get them if needed. Another question i have is my base fuel setting is 38psi and i seen some guys running at 43 psi.
