Question about Fuel Trims with AFC

I just got my logger hooked up and I played with it a little at idle. I can watch my short term and long term fuel trims. I have no clue what this means...I know I should know this already but can someone explain it to me...why it's in % and what it should be.

Thanks that site is imformative. In RRE's AFC tips, they say that ajusting leaner at a given rpm until the ecu can no longer correct itself, then richening it back 10% will put you at 0-5% fuel trim. Why do they say 0% is stoitch and TMO says 100% is stoich?
