Bad Air/Fuel mixture?

Ok i just got the new enging put in, and I dont know whats up. If i leave the ar for a few hours, then go to crank it up (usually in the morning, or late afternoon) a gang of white smoke will come from the exhaust. Ive been told that it does it while driving down the road as well. Also my A/F meter, bounces around like crazy. When i first bought the car, with the old engine, and everything was tuned right, i would stay lean, until i gased it, then it would go to rich. Now it cant make up its mind what it wants to do. It idles alot, and sometiems i wil lbe running rich while im just idling. I have an SAFC I in there, so i dont know if i can use that to make some adjustments or not. Also i previously had an Apex ITC in there, which this shop took out because they couldnt get the car to start with it hooked up, and in a sense didnt know anything about it. I asked this shop several times about the white smoke, and like with every other problem i have, they just tell me "well its a high performance car". That is their excuse for any problems i have with it. Also they replaced my Fuel pump, which was a walbro, and was essentially brand new and didnt need to be replaced, and i have a big problem with this fuel pump coming loose. They jsut told me that it is a "high volume" fuel pump, but i have my speculations. Any help would be greatly appreciated.

Go search on closed loop mode. That's when the ECU used the feedback from the O2 sensor to maintain 14.7:1.

The cycling your seeing is a sign of correct operation as the ECU dithers the amount of fuel to make the O2 sensor switch between lean and rich.
