Replace the thermostat, they can stick. Also pressure test your cooling system, make sure there are no leaks. Fill your overflow bottle half-way up with water. Use only distilled water reccomended in the service manual for long cooling life.

I don't know what your coolant mix is at the moment but try a 70/30 water to coolant mix, and maybe some water weter. We don't live in that cold of an enviroment so we don't really need to worry about coolant to keep our pipes from freezing.
