oil is just disappearing

I have a 96 tsi awd with a 1g engine swap just done 5k ago. First time I change my oil with new engine it was low, but I figured that's normal with a new engine (soaks it up). This oil change (1,800 miles) there was only about 2 qts of oil in the engine, and I even added 2 qts within the 1800 miles. There is no leak, so where is it going, and why?

Tell us more. What, pray, in an engine possibly "soaks up" oil? Spongiform iron, perhaps?

If you aren't leaving [rather large] puddles, it's being burned someplace. Suspects are rings, valve guides, valve seals, and turbo seal. Which ones did you skip over replacing?
 
I heard that with a new engine there will be some soaking of oil into the new internals, plus I had a shop (A well-known DSM shop, which is blowing me off) build the engine for me. I figured they done engine-rebuilds for a while and they SHOULD know what they are doing
