All you need to do is unplug the harness near the top of the pedal assembly.

Is that a 1G picture? On the 2G, the switch is up in front of the pedal, and I'm convinced _no_one_ can reach it. However, if you trace the wiring back out, there's another plug right on the rear side of the pedal assembly nice and easy to get to.

If you run that circuit to a hidden switch, it'll delay a thief a bit longer.
