I have a stainless steel tubular exhaust manifold and I'm trying to install a EGT probe, the bung I have is zinc is that compatible to weld to my manifold and will it hold up to the exhaust heat?
 
I don't believe it would hold well, but I'm not 100%. But what you could do is get the thread size and call a few shops to see if they either can get, or stock stainless bungs. That would be your most reliable option for the heat that bung and welds will see. I wouldn't imagine it costing more than $10 for one?

Im an apprentice welder so I'll do my best to help, here we go...
Zinc has a melting point of 787.2*F, and turbo manifolds routinely reach over 1000*F. I'd take a guess and say thats a bad idea. Even if its just coated, you would have to grind it down to weld prep it, and still might not get a nice, 100% leak-free weld.
I'd say just get a stainless weld bung, (can be had for $3.95 at 02bungs.com if u need) then take it to a welder. $20 and 10 minutes later and you should have a nice reliable finish, with a little extra peace of mind.
