Is the "AEROMOTIVE 13109 A1000-6 INJECTED BYPASS A1000-6 Injected Bypass Regulator" an acceptable AFPR? What characteristics must I look for other than the range of pressure and the 1:1 ratio? This on ranges from 30psi-70.

Yes, that afpr will do just fine.

You will have to buy the fittings for it because they aren't included. Since you will only be using one inlet port you will have to block the other off.

If you want to put a gauge directly on the afpr it must have provisions for that too (the 13109 A1000-6 does have a gauge port). You can buy afpr's with different inlet and outlet port sizes so buy one with the correct size you want. -6 AN is a good size to go with.

You can buy an electronic gauge that goes in the cabin like this.

But for the cost of that gauge (~$200) compared to the cost of a gauge that attaches right to the afpr like this, the electronic gauge is not very cost efficient. Also, it is easier to set the fuel pressure with a gauge right on the afpr.
