MAFT tuning help..im a little rusty

So if someone could give me a brief overview on this whole fuel trim thing i think all my knowledge will come back to me, i went to UTI but havent touched anything related to fuel trim in over a year :-X ... I have a scan tool that my shop foreman so graciously let me borrow for a few days, and i know how to do snap shot of the data list and all that jazz... heres a list of my mods... 1995 GSX 7 bolt, stock head, 2.5" turbo back exhaust, HKS BOV, FMIC, Hard Piping, 3" GM MAF, MAFT V 2.02, stock injectors, SBR .50 trim turbo, no intake (filter on the turbo), HKS BOV (im an idiot and put it BEFORE the GM MAF i'm going to change it), 255 lph fuel pump and i think thats about it... i think once i start thinking about this more and more and read the replies you guys (hopefully) give me my training will come back to me. Thanks guys...
 
OK so heres the deal with the fuel trims... i could only get the STFT and the LTFT and cruising speed and WOT... so here it is.. Crusing speed on the highway STFT - 17.5%...LTFT was 12.5%. Now at WOT the STFT dropped to 0 and the LTFT stayed at 17.5%... after i took a snap shot of those i went back and did the cruise again and the wot pull again and watched the o2 sensor charts (both sensors at the same time and everything looked normal).... so anyone have any suggestions to what to turn those pesky little nobs to in the MAFT???
