Am I suppossed to use plain water? Will my car overheat?
 
The only time that I have seen that requirement, was on 9.99 sec and faster cars. Also "no coolant" means no antifreeze, you can use additives like Redline Water Weater and other similar products.

Even if you had to use pure water, you would be OK. The difference is not all that great, especially on street cars. You just can’t leave pure water in there for too long or rust will be a serious problem (I am not even mentioning the obvious freezing problem).
