I can't tell you exactly how to wire that, but rather I offer a suggestion. I installed a 3 position switch on the dash in my last project car that allowed the cooling fan to stay on all the time by direct power from the battery. The middle position kept the fan off, no matter what, the last position allowed the fan to run the way the factory originally intended. The middle position was great because on the Mustangs of late 90's came with accessory driven fans rather than electric so we usually converted to electric, however the fans turned on even before starting the engine...a pain in the ass durring winter.

Instead you could connect a direct power wire to a mercury switch set to a lower temperature. This way the fans come on sooner than they would with the ECU controlling them.
OR
Just wire the fans to a relay, similar to the fuel rewire mod. Again you are going to have to have someone go over a wire map and figure the best circuit to tap into without overloading.

I've always heard that DSM's run too cold as it is...
