I removed my head and all of the pistons seem to have hit the valves.
I was wondering if the stock pistons normally have the little recesses in them or if that would have been caused by the valves

they are pretty covered in carbon so i am going to clean them up and see what they look like then. Any opinions are more than welcome and if anyone knows where i can get either stock or better pistons for a good price let me know

The stock pistons do have recesses for the valves. Can you post a picture of them?

They have small flycuts for the valves but get bigger when they hit one.

If the valves recently hit the pistons you could tell because there wouldn't be as much carbon build-up in those spots, and the metal would show it with a more sharp indent and possibly some displaced metal. The stock indents are fairly smooth.

they honestly looked really dirty more than anything
im going to get a picture of it this weekend so we can take a look
im going to clean them up and see if they look scarred up

how will i know if they are still useable or if i need to replace them

If they have any cracking or sharp edges where the valve dinged them deep...
