Where should I start checking for a non working Temp Gauge? I read a few threads that say rebuild the stock gauge / Check around the T-stat, Can anyone give me better instructions? Thanks!

Sensor and/or connector. It's the one wire hookup at the bottom/right of the t-stat housing on my 1g.
If the gauge is bad definitely look into an aftermarket gauge else find a used instrument cluster and gut the needed parts from it.
