Little confused on stock fan control....

Alright.

Car has no over heating issues.
It only has the engine fan on the passenger side of the radiator.
I remove all AC components from engine bay, only wiring remains intact.
Im using a 180 degree T-stat. O
On the highway averages 195*
In town it averages 210*

Goal: Fan conrol at any temp for quick cool downs at the track...and driving around town.

Question is: Instead of hooking up the relay bypass and toggle switch...couldn't I just use the factory interior A/C button as a fan switch?

*from what I've read the Engine fan and A/C fan should come on regardless of engine temperature.*

When I removed my a/c i left the a/c fan in, so the fan on the passenger side comes on normally whenever temps get high like always, but when i want a quick cool down i just push the a/c button in the car and the a/c fan comes on whenever i want. I would imagine you could wire up the pass. side fan to run off that switch somehow as well.
 
When I push my AC button once (orange light), the passenger side engine fan comes on. When I push it twice (green light) the second engine fan (AC fan) comes on as well. This is with the AC/Heat fan speed selector knob anywhere except in the off position. I have no idea if this is standard for 1G's but it was like that when I bought it. Does it work that way with all 1G's?

although this does not answer your specific question you may separately want to consider eliminating the hi-lo radiator fan speeds so that when it kicks on it is at the highest speed setting. See: http://www.dsmtuners.com/forums/articles-electrical-wiring/233644-fan-wiring.html

Also, you may want to consider replacing the stock temperature-rated thermostat (IIRC its 180 or maybe even 190) with a 170 degree T-stat. Notice I said replace, not eliminate. "Stant" makes a 170 degree thermostat which fits our cars and its part # 14077.

Prior to the t-stat switch my temps ranged similar to yours which I felt were a little too high for my comfort. Maybe they are perfectly fine but my htinking is long term its better to consistently be within temp specs but preferably on the mid-lower side of same. Since the t-stat switch my temps now range from from 189-192 (very, very rarely reaching 196) in city/stop and go traffic to 189-186 on the highway.

Aside from the t-stat I also have the hi-speed only fan re-wiring, two 10" slim "pusher" fans mounted in front of the A/C condenser which are on whenever the engine is on, and a fluidyne radiator with two 12" "puller" fans. The 12" fans are controlled by the ECU and come only whenas needed. I have a pretty large Greddy Big 24 FMIC which is a major obstruction of airflow in and of itself. Even with all the above though my temps were still a bit on the high side like yours seem to be until I put in the 170 degree t-stat.
