Just pull the head, intake and exhaust manifold, etc... until you get to the block. It's fairly easily, but you have to know the car in order to put it back together. And dependable on the condition you could face things breaking, i.e. studs, etc...
 
I would leave everything on the motor, just take all the stuff in the engine bay off that isn't on the motor (ic pipes, battery, intake, shifter cables, etc). Make sure everything is clear, unbolt the motor mounts and start housting it out.
 
Pull the motor and transmission at the same time. I wouldn't recommend seperating the motor, leave it assembled. Then once the engine and tranny are out you can seperate them on the ground. It isn't a difficult task but a buddy with experience is great to have. If you can't find one of those, a buddy would work fine. I have pulled them by myself. Bag and label everything as mentioned and label both sides of every electrical connection or vacuum hose connection. It will save headaches in the future.

What year (of car) is the motor coming out of and going into?

As Laysher says: PULL THE MOTOR AND TRANNY TOGETHER! I dropped mine out though the bottom of the car, but I have heard of going out though the top, yet it the engine and tranny goes/comes out at a sever angle.

Don't pull the head, intake, or exhaust manifold. Pull what the others mentioned. I had to pull my turbo, power steering pump, radiator, axles & T-case for tranny drop, and pulled the AC compressor for giggles. Also remove the hood before you get started, you will be glad you did.
