Well in a nutshell they maintain the pressure on the spings while you dissassemble the shock assembly. That keeps them from knocking your teeth out just in case they are still loaded with 500+ pounds of pressure on them. A spring coming loose like that can really cause some damage to you and anyone within 50 ft of you. Well maybe not 50 ft, but either way its not something that you can just catch with your hands to stop it.
 
I work part time in a garage just doing oil changes and little stuff but one of the mechanics was working on a spring compressor and the spring flew out of it and it bounched, chipping the concret floor and hit the sink and broke it, don't do anything unless you have a spirng conpressor.
