Question on porting?

I'm rebuilding my motor now and I'm also porting the intake and head but damn check this picture out. This is how much I need to remove to gasket match on the exhuast side on the head. Should I remove all this? Thanks!!! http://stu.aii.edu/~alr181/exhaustside01.jpg

No. Do not gasket match the exhaust side to the exhaust gasket. You want to keep the ports the same size as the exhaust manifold runners, which they already are. Only port them bigger if you have a tubular exhaust manifold.

I forgot to add that I'm running a Evo III manifold with the Evo Big16G from Slowboy
