Help w/ Adjustable Fan Controller

I have a Flex-a-Lite dual fan set up in my car. To control them, I purchased and installed the following controller:

JEGS Performance Products 52126 JEGS Adjustable Dual Fan Control Kit w/ Dry Temperature Sensor

My problem is that the fans keep cooling the car to below 170* (I have them set to come on at 200*). I think this is because the temp sensor is connected to an intake manifold bolt, as recommended in the instructions. Since the coolant has a different cooling rate than the bolt, I think that is my problem. The coolant is cooling off, but the bolt is staying the same temp.

Has anyone used this set up or one with a similar temp sensor? Can I bolt the temp sensor somewhere else to get a more accurate reading?
