Does anyone know what the sequence is when removing the head bolts is? Or where I can find that info? Ive been searching everywhere and have no luck. Also what the torque specs are for those bolts (ARP). Thanks.

There is no real undoing procedure but it is good practice to undo in the same sequence as you tension! Head bolt tension? 6 or 7 bolt stud size?

Yes there is actually. A standard Haynes manual shows you how to untension the bolts in steps. I believe it is from the center out, quarter turn each bolt, repeat a few times until you can remove the bolts with your hand.

I'm not sure that it REALLY matters, but it can’t hurt. I do believe there is a small chance of tweaking the head if you just crack the bolts loose in any order. I went through painstaking detail taking my head off, and putting it back on. It’s held a few 30 psi pulls on a 50 trim over the course of the last three years on reused 6 bolt bolts.

Buy a Haynes or OEM manual. There is no way you should be doing work like this without a manual that explains how to do this and the torque numbers you need to achieve.
