Yea, get some stock injectors cheap. Its the safest and best way out. And as far as HP goals... it all depends on the rest of the setup, every car is defferent, you'll have to do some testing and tuning to hit the number you want.

You need some sort of tuning device, an Apexi SAFC or DSMlink. If you don't have a big turbo that needs a lot of fuel, you'll be much better off going back to stock injectors. It can be a hassle to tune if you don't have the right resources... something to tune with, something to log data with...

It doesn't sound like a thermostat problem. Id look into a way to test the guage itself, sounds to me like that's where the problem is. Get it warm and pop the hood while it sits and idles, watch to see if the fan kicks on.
Yes, don't buy an ebay 20g. All those new 16g and 20g turbos are cheap copies. You've already got some of the supporting mods... 255 pump, 650s, sounds like you're getting exhaust figured out. Get a 20g, FMIC, and DSMlink and you'll have yourself a nice little hotrod.

I can confirm that. Ive done this on my 92. It was completely gutted at the time, so I just didn't put it back in. It will take time to remove it all, but it can be done.
I can't help you with all you're questions. But I installed ARP's in my motor when I built it, and torque specs are different. Im not sure what they are, but you could problably find out on their website or if you e-mailed them.
It sounds like something in the dash or ignition switch to me. You said the guages don't dim or turn off or anything. That says to me that the car is never getting a signal from the switch that you're trying to start.
I did my 1g gauges with bright white LEDs and white needles, then I went through and swapped in white LEDs in all my switches/buttons on the dash. It looks WAAAYY better than stock. I love it!

Yes, you're correct to assume the evo 9.0 com = compression. The 2g's are 8.5:1. And from what I've heard the evo pistons are slightly lighter. Not positive, but I seem to remember reading up on them when I built my motor some time ago.
