You could just save yourself the time and hassle by finding out what the offset are of the wheels you are trying to test. Stock EVO wheels are +38mm. If the wheel you are trying to test is +38 or less, it will fit. If it's more ( +39mm and up), then they won't fit.

Having a vacuum pump definitely helps when you are on your own. Gravity bleeding goes a bit quicker though, if you have a friend to pump the pedal for you. Definitely make sure there is no air in the system (that's what the problem seems to be from your post).

I would have just taken that old caliper to autozone/napa/advanced auto and gotten a remanufactured one. You would have paid $30-40 bucks at most, and saved yourself a ton of headache. Plus the remans have lifetime warranty. Anything goes wrong, (i.e. they rust up) take it back, get a new one :)

STAY OUT OF BOOST!MAke sure all the maintenance stuff is taken care of: O2 sensors (Very jmportant), coolant temp sensor, plugs, wires, clean air filter, fuel filter, check for all leaks (boost, vacuum), etc. etc.
Fidenza Flywheel, ACT 2600 Street Disc here, held up great at all the tracks I went to. Also have TRE Custom Tranny. The setup works fine, but like they said, if you can get a lighter disc, go for it.
