Throw some ARP's in there, that should hold the head down. However if the head was lifting you would have oil and coolant issues as if a head gasket was gone.Sound like you just have a nasty boost or vacuum leak to me
I doubt that ould be a problem because t's getting air regardless. have you tried fiddling with an idle screw at all on the throttle body, might raise the idle enough to stop it dying out

Get that new head on and drive it. Just enjoy it. I'd get yourself a spare block and start slowly building it for when your ready to go for that 10 secs
You say its squeezing past your manifold. Could it be coming from the manifold? Could be the valve stem seals or, check the manifold studs as these pass extremely close to oil passageways and can sometimes work loose and leak oil out
Looks nice as it is. Just touch up the bad bits. You will get more money in a couple of years for a clean original looking car than one with a cheap paint job. Let's be honest you really do get what you pay for when it comes to paint jobs
Definately do the leak down test. Because it may not necessarily be a piston or bottom end. I had the same issue and id bent and damaged a valve and came up as a 0 on the compression tester from where my valves had hit the piston
