Your boost gauge may be malfunctioning check the lines. It may have read 3lbs on the gauge but as you stated the car still ran fine and blt was sound, seems like a gauge problem.

all belts have a tensioners your ac should not be off its bracket at all. tighten ac back up loosen ac tensioner pulley then put belt on, and tighten ac tensioner pulley until its taut.

i would say its not tuned on the e85 quite well, go to a dif tuner who is more experienced with e85. you should at least be at 300 hp with 22-25 psi . your setup should be able to go beyond that tho.
