Good morning everyone, I am replacing all the gaskets of my engine using an Ajusa kit.
I feel a bit lost with all these gaskets with no id at all.

Is this part of the head included in the kit?

What is the correct torque patern for head bolts?

That's the lifter body that diverts oil and supplies both channels that run along the head to fill all the lifters. That gasket almost never goes bad because it's a metal plate. If you believe nobody has touched it (and they really shouldn't have), then don't disassemble it.

For 1G 6 bolts the torque procedure is simpler, a star pattern and torquing in 3 stages to a specific torque range, listed in the service manual. I can't remember off the top of my head and the manual I have is for a 7 bolt which uses TTY bolts. You should find a service manual for your specific engine year and look it up.

Torque sequence for both 6 bolt and 7 bolt engines have been covered extensively. Also, download the service manual from this site. Invaluable tool

Also for the three curved cam caps that sit against the edge clean and apply some RTV underneath those and torque back down. I just did a mild rebuild on my head finished it yesterday and got it all back together, the torque pattern that I followed was and as far as torque amounts goes that will depend on your hardware as welll. I have ARP studs and I torqued 20,50,80 and I let the head sit for 10 minutes between torque.

Victor reinz stardard bolts. reusing old washers.
I did checked the service manual but no torque is stated on engine section.

I'm just rebuilding all the gaskets as the car was a bit leaky for just 90.000 miles.

If it's a 7-bolt they aren't torqued down exactly. There is an initial rating then a sequence of 90 degree turns. Its called a torque to yield bolt. TTY bolts. You can do the sequence easily with an angle gauge.
