I had a thought about removing the ac unit that's under the dash but then I thought, what if I turned that unit into a way for heat to escape externally. So when I turn on the heat it sucks the air from the bay and vents it outside.

In theory, it's plausible, but how are you going to vent it outside? Are you willing to make additional holes, potentially large ones, in order to vent the air that's already escaping the engine bay from below the car? Not a bad idea, but there's not really any efficiency in doing it.

You might only be getting a gain in weight loss by removing the unit and putting sheet metal in its place.

It would essentially be just a larger radiator. Might as well just install a larger radiator.
