What would be a best rim size for gs eclipse? I'm thinking either 17 or 18

Like 11Banger said, it depends on what you plan on doing with the car. Most drag racers want the lightest rim possible to have a lower rotating mass, so a 15" or 16" would work well. If you are aiming for better handling a 17" or 18" will be better because the tire will have a shorter sidewall.
At the drag strip a lower rotating mass is definitely the way to go. I also have a 2005 Dodge Magnum Rt that I occasionally race and I dropped 2 tenths of a second just by switching from my 20" rims back to the 18" rims that my car came with!

Stock for a gs is 16. Gst and gsx are stock with 17. Most drags will have smaller rims while streets will have larger rims with low profile tires. Depends on your goal.
