Possible Bad T-Stat?

Since I finally picked up another ScanGaugeII, which I must say is a nice little tool, I've been observing quite a few things on my car, temperature being one of them. The car warms up fairly quick, but as soon as I start driving the process moves at a snails pace. If I'm at a light the car will be anywhere from 190-200. When I'm driving or on the freeway, it will range anywhere from 140-170. Does this sound like the t-stat may be sticking or something else?
 
Airflow through the radiator at highway speed is much more than sitting idle with just the fans pulling air in from in front of the hot radiator. The Tstat is most likely fine provided that's all you've observed.

Yes true, but 140 degrees F is a fairly cold operating temp. A properly working thermostat wouldn't allow the car's temp to drop this low under the driving conditions described by the OP. Sounds like the Tstat is sticking open or partially open. I would replace it.
 
Seems ok. If you're really that worried, just replace it. Cheap and easy fix.
 
like everyone said. If it bothers you then replace it man and put it behind you :) theyre a cheap and easy fix.
 
Small update on this. I haven't changed the thermostat yet. However, I adjusted my TPS. It was set at 3% and now it is at 0% like it should be. Ever since I've adjusted it, the car has warmed up fine and held temperature. So question being, can the TPS affect the way the car warms and cools?

Update. Previous post turned out to be nothing but coincidence. Replaced the thermostat and now I'm at a toasty 200-205. The old one was stuck open.
