It was basically a 30-gallon fuel drum laid on it's side with a firebox positioned low and off-centered to one side. You put your firewood of choice in the firebox, and it connects to the main cooking drum through a single vent chamber. The smoke and heat basically rise through the main cooking drum. Pretty sweet, very simple.

Is the brisket just slow cooked, or does it have sit in a rub and/or dry age in the fridge a few days?

I have hickory chips here too. I like to smoke ribs for a few hours.
and Christi, you should have had my flank steak at the shootout last year. I had it marinating all weekend but Dave forgot the grill so I made it when I got home.

Hmmm...sounds like Erick and I have our day planned. Pool, booze, and cookin' brisket. I'll feel right at home!

I'm a Miller Lite fan BTW

My Dad and I always soak it overnight in a mixture of things then smoke it for 6-8 hours. So if we're doing this, I'd need to have it on the grill at your house no later than 11am. You game?

I should head over right after work, then roll to the meet straight from there! Erik's house (no pun intended) party would literally have three DSMTuners Mods in attendance! We could rise as one and become....the SUPERMOD.


....sadly, all three of our accounts combined still wouldn't have nearly as many posts as Defiant.

It's labeled as a beef brisket- and any good meat market should have one...you can also get them at WalMart. :thumb:

Here's an idea. I imagine Eric (turbosax2) is attending the Ridley Creek S.P. DSM Meet, and I suppose he has his Monte Carlo in Glenshaw. Last I noticed, "The DSM is still in Mechanicsburg though...no place here to put it." Possibly, Eric could bring a few people along comfortably to Mechanicsburg in the Monte Carlo. Then, it may be a little cramped from there to the DSM Meet. Anyway, it would be worth it. Eric could potentially bring Justin and Christi (and/or another as well) creating a very inexpensive attendance. Problem solved.

As much as Justin has helped me, and his contributions as a whole, I would feel privileged to meet him. Currently, my spine is feeling better, and I expect to decide this weekend about enduring the drive to the DSM Meet. It has been people like Brian, Eric, and Justin that have fostered my appreciation for my GSX. Undoubtedly, I would feel obliged to see if any of you have a use for certain items that I would be bringing (as a simple gesture of my gratitude). Considering that my family also has our farm for sale, I have an abundance of tools that would no longer be needed, as well as my car parts.
