If the o2 sensor for the AEM wideband is before where the CAT is now, then no, it would not have any effect on it. You aren't doing anything different except removing parts AFTER that o2 sensor so you will get the same reading.
Have you checked your transmission to make sure it is installed and bolted up correctly? It may also be your clutch/disc/flywheel. First start off by checking the transmission to see if everything is in order on the outside of it.
