Find your total piston area for each caliper, determine what you want your brake bias is and call Wilwood. They will advise you based on piston area, and of course the line size.
Not to turn this into an oil discussion, but why are you running Mobil 1 synthetic? The "euro" castrol oils have proven much better for as cheap, I personally ran (and still run with my m3) Rotella Synthetic in my car, its a 5w40 with a high shear factor and has high mineral and zinc content...
240 degree oil temps are actually fairly fine as long as your running a decent synthetic. If it creeps over 260 is when id worry, but 240 is actually fairly right in line.Modern synthetics actually dont start to break down beyond 280, guess what that second SAE rating is at? Thats tested...

Whats your front toe? That will have a huge impact on turn in. It you want "crisper" turn in, more front toe is needed. Also how much camber do you have up front compared to rear?However from the way you describe it in the slalom, I am betting this has to do more with you overcooking...

Club racing with NASA you can do either Time Trials or Performance Touring. Time Trials is for time, performance touring is wheel to wheel racing.

Really really depends on how modded you are. May want to mod for STX (I beleive that would be the best SCCA classing for a gsx), and then either Time Trial with NASA or do a PT or ST class wether you want to do wheel to wheel racing or just slowly get into road racing with HPDEs and Time Trials...
