You really should do a leak down test. Only two other options I can think of are a radiator restriction or exhaust being pushed into the cooling system.
If your radiator cap is old and not holding pressure, it would explain losing coolant, overheating, and no white smoke out of the exhaust. Have you replaced your cap? If not, its super cheap, and easy obviously.

Have you looked into the Brembo CTS-V calipers. I believe they are supposed to be bolt on and KMV also makes a bracket for larger 14" rotors. They are also way cheap through GMparts. Last I checked they were running about $130-140 per caliper. I believe they came loaded too.
+1 for ignition module(transistor). Same thing happened to me twice. Last time I had no fuel or spark, and ended up being the crank sensor. The first time I did have fuel, just no spark. It was my ignition module.
Check your knock sensor for "goo" around it. If its bad it could be pulling timing real bad. The ecu might be adding more fuel because of this as well. Maybe that's why when you pulled fuel from the afc it had no effect.
